Banana Loaf

Hi Lovies,

Last week we had a few bananas left in the fruit basket and they were turning to the dark side of life. I’m quite a fussy eater as most of my friends know, I can’t bring myself to eating ripe/ over-ripe fruit. Luckily there is an upside to ripe bananas, BANANA BREAD!

I decided to make 3 loafs for my family and friends. It tasted amazing, I had one too many slices myself.

I quite enjoy bragging about my baking skills (not that it’s rocket science haha)

The recipe below will make 1 loaf, about 10 slices.

 

Ingredients

1 ½ Cup self-rising flour

1 Teaspoon baking soda

½ Teaspoon salt

¾ Teaspoon cinnamon

3 Medium bananas, mashed

8 Tablespoons unsalted butter, melted & cooled

¾ Cup brown sugar

2 Large eggs, lightly beaten

1 Teaspoon Vanilla extract

 

Method

Mix the flour, salt, cinnamon & baking soda together in a bowl.

Mix the eggs, sugar, butter, bananas & vanilla essence together in a separate bowl.

Slowly add the dry ingredients to the banana mix.

Spray the loaf pan with non-stick spray.

Bake for 55 minutes.

Smother slices with butter/ spread of your choice.
